With slight variations on idli batter, lots of tasty and famous dishes can be made. These are Kal dosa, ghee dosa, masala dosa, kuzhipaniyaram etc. I used to prepare idli batter more than required for my morning use and left out batter will be used in the coming days to make these varieties.

Idli Batter : 1 Cup
Oil : 2-3 tablespoons

Step 1: Preparation of Idli batter is mentioned in my soft idli recipe.

Step 2: Keep the Kuzhipaniyaram/unniyappam mould on heat as shown below.

Step 3: Put few drops of oil in each hole. Once it is hot, pour one teaspoon of batter into one of the holes.

Repeat this for all.

Step 4: Close the lid and keep for 2-3 minutes. Cook again for 2-3 minutes by turning it.

Step 5: Serve with white coconut chutney and Sambar.

I love cooking and trying out various recipes, and also to come up with ways to achieve good results in reasonable time and effort ? All of the recipes I post here were tried out by me at least 2-3 times (if not a few dozen times) before I was happy with a simple method which gives me good results. Hope you enjoy making these dishes. Would be thrilled if you let me know in the comments how your experiment went. If you have recipe requests for any Malabar dishes, please contact me and I’ll make every effort to get the recipe, try it out and post it here.
