Kadala Mittayi / Kadalach / Peanut Chikki Bar

Peanut Chikki Bar (Kadala Mittayi in Malayalam) is a popular healthy and tasty snack bar. It can be prepared either using sugar or jaggery. Jaggery peanut bars are healthier and very common in southern part of India. Depending on the type of jaggery you use, the elasticity and brittleness differs. So as per your choice, select appropriate jaggery. I use more elastic one as my husband loves it 🙂 The bar which is shown in the picture has been prepared using regular jaggery.

Ingredients:
Peanuts: 200g
Water : 3 teaspoons
Jaggery: 200g

Preparation:
Step 1:: Roast peanuts either using microwave or in a normal frying pan.

Step 2:
Put the hot roasted peanuts in a cotton cloth, cover and mash it to remove skin and also to split.

Step 3:
Take jaggery and add water. Keep it on flame and stir till it melts. If you think jaggery is not pure, strain the jaggery water and remove all residues.

Step 4:
Grease a steel plate using bit of oil and keep it aside.

Step 5:
Keep jaggery mix again on flame and allow it boil. Once it reaches single thread consistency, add split and roasted peanuts into it and stir for 2-3 minutes. Pour this mix on to the greased plate and flatten it using a spoon.

After 5 minutes, use a knife and mark for desired pieces.

Once it is cooled, the bar will be brittle or elastic as per the jaggery type.
