Dark Rich Chocolate Cake

My friend is big fan of chocolates. She likes all varieties of chocolates and its by-products.

Few months back she asked me to bake a chocolate cake. I baked one, thinking it would be good to prepare a healthy cake as we are getting older 🙂 Hmmmmm.. She liked it, but it was not so exiting, as it was a healthy cake and not a delicious one.

So she commented, why can’t you try out an unhealthy dark rich chocolate cake and the richness of chocolate should stay long in my mouth? 😉

This trial was a great success and later with the slight variations I came up with this final one.
Dark Chocolate Cake

Ingredients

  • Self-rising Flour : 1.5 cups
  • Cooking Butter (Softened): 170g
  • Eggs : 3 Nos.
  • Milk: 1/2 cup
  • Dark Cooking Chocolate (unsweetened): 200g
  • Castor Sugar: 1 cup
  • Cocoa Powder: 3 table spoons
  • Vanilla Extract: 2 teaspoons
  • For Icing

  • Dark Cooking Chocolate(unsweetened): 200g
  • Fresh Cream: 1/2 cup
  • Icing sugar: 1 cup -can vary as per your taste

Preparation

Step1: Melt chocolate

Chocolate can be melted either by using microwave or placing on heat. If you use microwave, take a microwave safe bowl and place the chocolate in it and microwave for 1 minute and and stir well. Repeat the same one or two times, till the chocolate is fully melted and smooth. If you don’t want to use microwave, place chocolate in a steel bowl and add a drop of water and place on low heat. Stir continuously till it become a smooth paste. Allow it to come back to normal temperature.

Step2: Getting ready
-> Preheat oven to 170 degree C.
-> Mix flour and cocoa powder in a bowl and keep aside. If you use maida, add 1/2 teaspoon of baking powder and 1/2 teaspoon of baking soda to it.
-> Grease 22cm cake pan. Add a pinch of flour into the cake pan and shake the pan to make a thin layer of flour on the base and sides.

Step3: Cake Mixing

In a big bowl add butter and castor sugar. Using an electric mixer beat in high speed until it is fluffy and very light. Add vanilla and mix again.

Always add eggs one at a time. I would say, add an egg and beat in medium speed for 20-30 sec and repeat this until all eggs are over.

Step4: Add melted chocolate
Add melted chocolate from Step1 and beat again till all ingredients are properly mixed.

Step5: Mix Flour
Add half of the flour mix from Step2 and 1/4 cup of milk in to the cake mix and fold it using a rubber spatula. Make sure that you are folding the mixture gently. Add remaining flour and milk and repeat the process until all are combined. This is an important step as your cake wont turn out soft if you don’t fold the mixture gently and carefully.

Step6: Bake
Pour the mix from Step5 in to greased cake pan and bake for 30 minutes. Insert a skewer in the center of the cake and check whether it comes out clean. If yes, you are done, otherwise bake for some more time. This may take 30-40 minutes.

Takeout the cake from the pan after 20 minutes and allow it to cool.

Icing:
This is an easy step. Add chocolate, cream and sugar in a bowl and microwave for 1-2 minutes (stir in between). Vary the sweetness as you wish. Once it is cool, spread this on your cake.

I have sprinkled some chocolate chips on top of it to munch chocolate pieces in between 😉
