Eggless Butter Cookies/Butter Biscuits

Butter biscuit is a delicious snack which is almost like normal butter cookies, but there is no egg or baking powder used for preparation and it is crispier than normal cookies. For preparing regular butter cookies, dough has to be kept in the refrigerator for 2-3 hours and then roll and cut using cookie cutter. But for making butter biscuit, I use little more maida which helps to handle the dough without being frozen. So you can use your palms to make biscuit shape or use cookie cutter to make some unique shapes.

Ingredients:

  • Butter : 200g
  • Maida: 4.5 cups
  • Salt : A pinch
  • Sugar (powdered) : 1.5 cups

Preparation:
Step 1:
In a bowl, add maida and salt. Mix well.

Step 2:
Add butter in another bowl (if it is not soft, keep it in microwave oven for 20 seconds). Add sugar. Using an electric mixer beat the butter and sugar well.

Step 3:
Change the electric mixer blade to atta kneader and start adding maida into the bowl from Step 2. Add all maida and keep on kneading till you get a soft dough. Take a small portion of the dough and make small ball and press it slightly in the palms to become a round shaped cookie.

Step 4:
Keep the cookies (leave space in between) on cookie sheets or on aluminium foil and bake them in a preheated oven at 170 degrees for about 30 minutes. Take out from the sheet and serve it after 30 minutes.

You can roll it in honey and then into icing sugar and add little bit of strawberry cream on top to get a little more sweet snack.

Enjoy your eggless butter cookies with a hot cup of Tulsi Tea!

I love cooking and trying out various recipes, and also to come up with ways to achieve good results in reasonable time and effort ? All of the recipes I post here were tried out by me at least 2-3 times (if not a few dozen times) before I was happy with a simple method which gives me good results. Hope you enjoy making these dishes. Would be thrilled if you let me know in the comments how your experiment went. If you have recipe requests for any Malabar dishes, please contact me and I’ll make every effort to get the recipe, try it out and post it here.
