Chakkakuru Moringa Erissery / Jackfruit seed with Drumstick leaves Curry

Jackfruit is the largest fruit in the world, but its kids are not what we would expect them to be – the largest seeds 😉

They may not be the largest, but they do pack quite a punch in them. Jackfruit seeds are rich in thiamin and riboflavin and is a great source of iron. It contains Vitamin A which helps in maintaining good eye sight. High amount of proteins and other micro-nutrients contained in the seeds help in managing stress levels.

Drumstick leaves or Moringa leaves are rich in Vitamin A which protects eyes and Calcium minerals important for healthy bones. In addition to these, it has n number of goodness and are aptly called miracle leaves!!

Imagine a recipe with miracle leaves and our jackfruit seeds!! Healthy.. hmm!! Yes, of course. But it is really really yummy too.. !

Try this out.

Ingredients

    Mustard : 1/2 teaspoon
    Water : 2 cups
    Red Chilli Powder : 1/2 teaspoon
    Oil : 3 teaspoons
    Salt : 1/2 teaspoon

Set1

    Jackfruit Seeds : 1/2 cup (remove the outer skin and cut into small pieces as shown in the image – do not remove red color inner skin)
    Moringa (drumstick) leaves : 1/2 cup
    Turmeric : 1/4 teaspoon

Set2

    Cumin seed : 1/4 teaspoon
    Grated coconut : 1/4 cup

Set3

    Curry leaves : 10-12 leaves
    Dry chiili : 2-3 nos.
    Shallot : 3-4 sliced
    Garlic : 3-4 cloves
    Coconut : 2 teaspoons

Preparation
Step1: In a pressure cooker add ingredients Set1 and 1/4 teaspoon of salt and 1 cup of water. Cook for 2-3 whistles and switch off.

Step2: After 15 minutes, open the pressure cooker and add moringa (drumstick) leaves, chilli powder in to it. Allow it boil for 5 minutes.

Step 3: In a mixer grinder, grind ingredients Set2 with 1/2 cup of water. Pour this into the mix from step2. Boil again for 5 -10 min.

Step4: Heat oil in a small pan. Add mustard seeds and allow it to pop – Make sure the oil is hot before you add the mustard. Add ingredients from Set3 and fry till coconut becomes golden brown.

Step4: Pour this mix in to the curry from step3. Mix well. Add salt if needed.
